Hi Jenn. That is great news about how much you

have already cut back. I know so many people

worry about protein and not getting enough on

a vegetarian diet, and that is largely exaggerated

because people typically get more than enough in

their diets. Once you start reading food labels you

will see protein is most everything you eat.

Have you tried veggie burgers and other meat

replacement vegetarian food items on the market?

Many are very good so you might enjoy exploring

them. Going vegetarian can be a fun adventure. :)

Thanks so much for the encouragement! I am slowly becoming a label reader. I am

shocked about how much sodium is in almost everything! Anyway, I haven't tried

veggie burgers yet, but I do eat grilled portobellas instead of a hamburger all

the time. I have a package of msf veggie sausage links lurking in my freezer

that I haven't tried yet though.I also like Amy's frozen stuff, and I know there

is tofu in alot of those. I guess I'm like a little kid, I can eat it if I

don't know it's there. I really am having fun with adding more veggies. My

hubby is a meat and potatoes boy from Alabama, and I've even been cutting down

on the amount of meat he eats and he hasn't really noticed because of all the

great veggie recipes I've been picking up here.
