Several years ago I had stomach surgery that removed most of my stomach and staying veg is better on my body. (Maybe no one else's, but for MY body it is.) I tried eating meat as my surgeon ordered, but it made me so ill I ended up back in the hospital. Sooooo eventually the surgeon agreed that my gut just cannot handle meat, fish, fowl, bugs...(they just showed people eating tarantuals on the news...blech). My husband of 40 years is diabetic, so I will sometimes post a recipe with aspartame. I know there are those who won't use sugar subs (I was one till my stomach problems turned me into hypoglycemic). I'll try to remember to put a disclaimer in the subject line. We run a no kill cat shelter in our home with over twenty four current residents. Also inhabited by four large dumped dogs who think they are cats. All of the animals here like veggies. I have to hide fresh tomatoes in the microwave because they will eat them before I can use them! That's about all, thanks for letting me join, Jeanne in Georgia Mock Pecan Pie, AKA Oatmeal Pie (great for those allergic to pecans) 2 eggs, beaten 2/3 cup margarine, melted 2/3 cup granulated sugar 2/3 cup light corn syrup (or dark, or mixture) 2/3 cup regular rolled oats 1/4 teaspoon salt 1 teaspoon vanilla extract 1 unbaked 9 inch pie crust Combine the eggs, margarine, sugar, corn syrup, oats, salt and vanilla. Mix well. Pour into unbaked pie crust and bake in 350° oven for 1 hour. Sneak preview the all-new .com. It's not radically different. Just radically better. If anyone has issues with it, they can sub back in the real sugar. I am sure some people will appreciate your advice and input on making diabetic vegetarian recipes; most of us know someone in our families or group of friends that have diabetes.
