Strawberry Salsa

 

I'm so proud....my six year old son made this salsa

pretty much by himself tonight. All I did was chop

and add the mint. It was his decision to add the

blueberries and it turned out great. This was great

on poundcake with a little whipped cream. When I do

this recipe in my kids' cooking class, I'll have them

make cinnamon sugar tortilla chips by brushing flour

tortillas with melted butter, sprinkling on cinnamon

sugar, cutting into wedges, and baking until crisp.

Measurements are approximate.

 

Strawberry Salsa

 

1/2 pound fresh strawberries, washed, hulled, and

diced

1/2 apple, washed, cored, and diced

handful of blueberries, washed

sugar, to taste

pinch of cinnamon

juice from 1/2 lime

mint, chopped, to taste

 

Combine all ingredients and serve as desired.

Yay for your son and his cooking adventure.

That is such a nice recipe for a kids cooking

lesson, too. So yummy and packed with vitamins.
