Guest guest Posted July 2, 2006 Report Share Posted July 2, 2006 BUÑUELOS (Mexican fritter dessert) 1 teaspoon salt 1 teaspoon baking powder 2 1/2 tablespoons sugar 4 cups flour 2 eggs 1 cup milk (soy will work) ¼ cup butter, melted oil for frying sugar and cinnamon mixture or sugar and ground cloves Sift all the dry ingredients together. Set aside. Beat the eggs thoroughly; then beat in the milk. Stir the dry mixture gradually into the egg-milk mixture; then add butter. Turn on to a lightly floured board, and knead very gently until the dough is smooth and of an elastic texture. Divide in about 40 small or 24 large balls. Roll these out to approximately 4 inches or 6 inches. Fry in very hot deep fat or oil (370 ºF.) I use my electric wok for them, until delicately browned on both sides. Drain on paper towels, and sprinkle with the cinnamon and sugar mixture. Serve as a sweet snack or a dessert. I like them with ice cream.
