Guest guest Posted July 1, 2006 Report Share Posted July 1, 2006 Banana Macadamia Nut Bread 2 cups all-purpose flour 3/4 cup granulated sugar 1/2 cup butter, softened 2 large eggs or substitute 1 tablespoon grated orange peel 1 teaspoon baking soda 1 teaspoon vanilla 1/2 teaspoon salt 1/4 cup orange juice 2 medium, 1 cup ripe bananas, mashed 1 cup sweetened flaked coconut 2/3 cup coarsely chopped macadamia nuts or walnuts Heat oven to 350 degrees. Combine all ingredients except bananas, orange juice, coconut and nuts in large mixer bowl. Beat at low speed, scraping bowl often, until well mixed, 2 to 3 minutes. Add bananas and orange juice. Continue beating, scraping bowl often, until well mixed 1 minute. Stir in coconut and nuts by hand. Batter will be thick. Spread into 3 greased (5 1/2 x 3-inch) mini loaf pans. Bake for 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely. Makes 24 servings (3 mini loaves). Tip: This bread can also be baked in 1 greased (9 x 5-inch) loaf pan. Bake for 60 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan.
