When converting a recipe, it helps to know what the egg is used for. It can easily be omitted in recipes calling for an egg wash - or to simply brush on pie crust. Some alternatives work better than others depending on the recipe for binding things, if it helps create volume when whipping things, etc... You could always stir in a tablespoon of tapioca maybe? There is only one egg used and it is such a large recipe, so speaking from my experience, I bet you could easily just skip the egg all together and the salad would still taste good.
