Guest guest Posted June 27, 2006 Report Share Posted June 27, 2006 I've been lurking awhile, but I made this pasta sauce the other day and had it tonite - cold - and it was amazing. Reminded me of the QOTW, so I thought I'd post. I used jarred sauce (Barilla's Arrabiata) as the base -- who can simmer tomatoes in this heat? -- but feel free to play around with your own concoctions. Hot and Cold Pasta -- serves 1 (Props to the single people!!!) 2 tbsp olive oil 1 small head brocolli 1/4 small onion 1/4 each red, yellow, green peppers 4 white mushrooms, sliced thick 4 water-packed artichoke hearts 2 cups arabiatta pasta sauce 1 cup farfalle pasta shredded pepper jack cheese Heat oil in pan Add brocolli and mushrooms, saute on high heat until brocolli begins to turn bright green and mushrooms begin to reduce. Lower heat and add the rest of the veggies Meanwhile, boil pasta according to directions. When pasta is about 5 min. from done, add pasta sauce to veggies and stir constantl (gently!) to keep from burning. Drain pasta and rinse well under cold water. Mix pasta and sauce and leave to cool and marry. (or refrigerate overnight.) Top to taste w/ shredded cheese and hot pepper flakes if desired.
