Guest guest
Here is a fruit salad I just love to eat for dessert on a hot summer day; it is great for breakfast too. It makes a lot of servings, so it is just perfect for picnic parties and backyard BBQing. Creamy Fruit Salad 1/3 cup orange juice 1/3 cup pineapple juice 1/4 cup sugar 1 egg, beaten 1 Tbs. plus 1/4 cup lemon juice, divided 1 cup whipping cream, whipped [or 2 cups whipped topping] 6 medium red apples, diced 6 medium firm bananas, sliced 3 cups halved green or red seedless grapes 1/4 cup chopped pecans 1/4 cup shredded coconut In a heavy saucepan, combine orange juice, pineapple juice, sugar, egg and one tablespoon of lemon juice. Bring to a boil over medium heat, stirring all the while. Remove from heat. When it is cool fold in the whipped cream. In a large serving bowl, toss apples with remaining lemon juice. Add bananas and grapes. Add the dressing; stir to coat. Refrigerate. Fold in pecans and coconut just before serving. Yield: 20 servings ~ PT ~ By fighting, you never get enough, but by yielding, you get more than you expected. ~ Lawrence G.
