Guest guest Posted June 25, 2006 Report Share Posted June 25, 2006 Zucchini Pancakes 1-1/2 cups shredded zucchini 1 egg, lightly beaten 2 TB Bisquick baking mix 3 TB grated Parmesan cheese Dash ground black pepper 1 TB cooking oil In a bowl, combine zucchini, egg, baking mix, cheese and pepper. Heat oil in a skillet over medium heat; drop batter by 1/4 cupfuls and flatten. Fry until golden brown; turn and cook the other side until browned. Yield: 4 servings.
