Guest guest Posted June 25, 2006 Report Share Posted June 25, 2006 Potatoes, Garlic And Olives This is so easy, to me it comfort food. 2 lbs. scrubbed and thinly sliced, blotted for moisture 3 tablespoons olive oil salt pepper 1 dash nutmeg 2 garlic cloves, minced 1 tablespoon chopped fresh parsley 1/4 cup oil-cured black olives chopped Saute potatoes in hot olive oil, tossing occasionally until browned and tender, about 20 minutes. Season with salt, pepper and a dash of nutmeg as you saute. Toss with minced garlic, chopped fresh parsley and black olives at the end of cooking.
