Guest guest Posted June 23, 2006 Report Share Posted June 23, 2006 Pasta with Tomato Sauce 4 oz. dried rotini or fusilli pasta 2 cups coarsely chopped plum tomatoes 2 tsp. olive oil 1/4 tsp. salt 3 TB shredded fresh basil 1/4 cup shaved or grated Parmesan or Romano cheese 1/4 tsp. ground black pepper 1. Cook the pasta according to package directions; drain. 2. In a sauce pan combine tomatoes, olive oil, and salt. Cook over medium low heat until heated through and tomatoes start to juice out slightly. Stir in the basil. 3. Divide pasta among 4 plates. Top each serving with some of the tomato mixture. Sprinkle with Parmesan cheese and pepper. Makes 4 servings. Nutrition Information: Per serving = calories 184, total fat 5 g, sat fat 2 g, cholesterol 5 mg, sodium 260 mg, carbohydrates 28 g, fiber 2 g, protein 7 g.
