Thanks for sharing your recipe. I appreciate all that sent some in. I ended up

making the Fleetwood and added the peas, but just thawed them. Also added the

kidney beans that you had in this recipe.

[recipe] Ananda Macaroni Salad

 

 

Here is a yummy macaroni salad recipe that I have

made before from the Ananda cookbook.

I typed it up as it appears and put my changes and

additions in brackets. :)

 

Macaroni Salad

 

~ Bring to a boil and cook in salted water:

 

6 cups sesame or vegetable macaroni

[i used tri-colored spirals]

 

~ Rinse with cold water and drain.

Combine cooked macaroni with:

 

2 cups finely chopped celery

1/2 -3/4 cup finely chopped red onions

[i used chopped scallions]

1 1/4 cups mayo

5 Tbs. garlic red wine vinegar

[i skipped this vinegar and used 1 Tbs. balsamic]

1 (10 oz.) package frozen peas, cooked and drained

2 cups cooked kidney beans

1/2 tsp. dry mustard, or more to taste

[i used 1 tsp. prepared Dijon]

1 rounded tsp. basil

1 tsp. garlic powder

1 tsp. Spike (availble at health food stores)

Salt and black pepper to taste

1 large can black olives, sliced

chopped green pepper, to taste

[i used about 1/2 of one medium sized]

 

~ Sprinkle with:

chopped fresh parsley

 

~ Variation:

Add:

5 hard-boiled eggs, chopped

Cubed cheese

[i added a few hard-boiled eggs]

 

Serves: 6 to 8

[This makes a pretty big salad. I'd say it serves closer to

10 people so it is good for taking to a BBQ picnic party]

Groovy! *lol* Hey, type up what you did and

give your macaroni salad a name and we will

put it in our tried and true recipe files.

I like to take inspiration from several different

recipes and come up with my own creations too. :)
