Rachael's Succotash Salad

 

2 cups frozen corn kernels, defrosted

1 can butter beans, drained

1 small red bell pepper, chopped

1/2 small red onion, chopped

1 TB red or white wine vinegar

2 TB fresh parsley leaves, chopped

2 TB peanut or vegetable oil

Salt and ground black pepper, to taste

 

Combine veggies and dress with vinegar and oil, salt and pepper.

 

Yield: 4 servings.
