Guest guest Posted June 19, 2006 Report Share Posted June 19, 2006 Tomato Zucchini Salad ~~~Salad~~~ 1 pint cherry tomatoes, quartered 2 small zucchini, cut into 1/2 inch dice 1 cup black olives, pitted 1 large bunch of watercress To a large salad bowl add, tomatoes, zucchini and olives. Remove the tough stems from the watercress. Rinse the watercress, dry, and break into small pieces. Add to the tomatoes. ~~~Dressing~~~ 2 garlic cloves, minced Salt, to taste 1/4 tsp. ground white pepper 5 TB white wine vinegar 1 tsp. Dijon mustard 5 TB extra virgin olive oil In a small bowl, add the garlic, vinegar, mustard, and white pepper. Whisk until blended. Pour in the oil in a steady stream, whisking constantly until creamy. Add the dressing to the Salad and toss gently to coat.
