Artichoke Pizza. 2 - 8 oz. cans refrigerated Pillsbury Crescent Dinner Rolls 3/4 c. shredded Mozzarella Cheese 3/4 c. Parmasean cheese, shredded 1/2 c. Veganaise/ Mayonaise 1 - 14 oz. can Artichoke Hearts, packed in water. Drain and finely chopped. 1 - 4 oz. can chopped green chilies 1/2 c. chopped bell pepper, finely chopped Unroll dough into rectangles and press onto the bottom and sides of a jelly roll pan. Bake at 375 degrees for 10 minutes. Combine remaining ingredients, mix well. Spread over the crust. Bake at 375 degrees for 15 minutes or until cheese is melted. Let stand 5 minutes before serving. Sometimes I like to mix in a few of the marinated hearts when I chop them up to put on a pizza. Have you ever tried battered, fried artichoke hearts before? They are so good! I have used a tempura batter and also a beer batter on them. I got the idea when we were on a vacation down in California and visited a town called Castroville [i think I spelled that right]. They are the Artichoke Capital of the US and there are artichoke fields all around. The restaurant my sister-in-law chose was not a very veggie friendly place, but they did have deep-fried artichoke hearts to dip in ranch dressing, so I was happy with that and a plate of salad. ~ PT ~ Month of June - beautiful are the fields; Smooth the sea, pleasing the strand; Beautifully long the day, playful the ladies. ~ anon.
