Guest guest Posted June 17, 2006 Report Share Posted June 17, 2006 Moroccan Couscous 1-1/4 cups water 1 cup vegetable broth 1 TB vegetable oil 1-1/2 tsp. grated lemon zest 1/2 tsp. salt 1 box (10 oz.) couscous 1 can (19 oz.) chickpeas (garbanzo beans), rinsed and drained 1 cup raisins Bring water, broth, oil, lemon zest, and salt to a boil in a medium sauce pan over high heat. Add couscous, remove pan from heat; cover and let stand 5 minutes. Fluff couscous with a fork and transfer to a serving bowl. Add chickpeas and raisins; toss to combine. Nutrition Information: Per serving = Calories 340, fat 3-1/2 g, sat fat 1/2 g, cholesterol 0 mg, sodium 560 mg, carbohydrate 65 g, fiber 6 g, protein 11 g.
