Pasta Salad Recipe question

In looking through the files I noticed I have

not yet typed up my favorite macaroni salad

to share with the group. I guess it is because

I really don't follow a recipe. It is a combination

of salads my mom, and my two grandmothers

made... I took ingredient ideas from all three

of these wonderful macaroni salad makers, and

added a few of my own ideas.

I promise to pay attention and write things down

in exact measurements next time I make this.

Basically it is just macaroni [any shape you have but

I prefer those littel shell shapes], chopped hardboiled

eggs [about three or four plus one sliced for decorating

the top of the salad], chopped green onion or very finely

minced white onion [depending upon what I have on

hand], chopped deseeded cucumber, chopped celery,

one grated carrot [i use my cheese grater for this],

mayo [enough to coat everything & make it creamy],

a dollop of Dijon mustard and a blop of dill pickle relish

[very inexact measurements here, sorry].

I stir all this together and season generously with ground

pepper. Then, I put it in the salad bowl, smooth the top

and lay the sliced eggs around in a nice pattern, then sprinkle

everything with paprika and Salad Supreme seasoning.

Chill for a good hour before serving.

I don't salt the salad like my Grams always did, but I leave it for

each person to add their own amount to their serving if they

want it.

You can add a can of chickpeas to this and it comes out great.

Hope this helps inspire you some, Judy. I know you will come

up with a wonderful mac salad since you are a very experienced

veggie cook from the recipes you've share here. :)
