Guest guest Posted June 17, 2006 Report Share Posted June 17, 2006 Kentucky Jam Cake 3 cups unsifted flour 1 Tbls baking soda 2 tsp ground cinnamon 1/2 tsp ground allspice 1 cup (2 sticks) margarine, softened 3/4 cup sugar 5 eggs, separated 1 jar (10 oz Red Raspberry or 1 jar (10 oz seedless black raspberry jam) 1 cup buttermilk COMBINE flour, baking soda, ground cinnamon, and allspice; set aside. Cream margarine and 3/4 cup sugar until light and fluffy. Beat in the yolks. Add preserves / jam. Alternately add flour mixture with buttermilk until well blended, starting and ending with dry ingredients. Beat egg whites until stiff. Fold beaten whites into jam mixture. Pour into three greased and floured 9-inch round cake pans. Bake at 350 degrees about 40 minutes or until done. Cool in pans 10 minutes. Remove from the pans and finish cooling on wire racks.
