Guest guest Posted June 16, 2006 Report Share Posted June 16, 2006 This is one way I like to grill my summer veggies for dinner. You can jazz them up by adding more spices if you like. Grilled Summer Veggies 3/4 cup Italian salad dressing 2 Tbs. balsamic vinegar 2 Tbs. minced parsley 2 tsp. lemon pepper seasoning 2 tsp. Cajun seasoning 1 medium zucchini, cut into slices 1 medium yellow summer squash, cut into slices 1 onion, sliced 1 green or red bell pepper, sliced 1 large carrot, cut into slices 2 celery ribs, sliced 6 fresh mushrooms, quartered In a large resealable bag, mix all the dressing and seasonings. Add in the cut veggies and mix around to evenly coat them with dressing. Allow to marinate for up to an hour. Drain, reserving marinade, and arrange veggies on a grill rack. Grill, covered, over medium heat turning every so often and brushing with reserved marinade. Cook for about 20 minutes or until tender as you like. Yield: 4 servings ~ PT ~ What is life?
