Strawberry-Rhubarb Parfait

 

1 pint fresh strawberries, hulled, quartered

1/2 lb. fresh rhubarb, cut in 1/2 inch pieces

1/4 cup sugar

3 tbsps. orange juice

1 1/3 cups nonfat vanilla yogurt

 

In medium saucepan, combine first four ingredients. Bring to a boil over medium

heat, stirring to dissolve sugar. Reduce heat, cover and simmer 10 minutes or

until fruit is soft. Transfer to a small bowl and allow to cool. Spoon alternate

layers of yogurt and fruit into 4 parfait glasses ending with a spoonful of

fruit. Allow a total of 1/3 cup yogurt and 1/3 cup fruit per serving. This

recipe makes extra fruit sauce. Save it and use on oatmeal, waffles, or yogurt.

Serves 4.
