I got to wondering how many almonds I need for each batch of milk - does anyone have a ratio for almonds to water??? Initially I thought I'd save some $$$ but after considering the price of almonds, that may not be true. I'm still going to get it as I am so anxious to have fresh homemade tofu! Hopefully someone more knowledgeable will jump in here to help answer your questions, but I can tell you what little I know. I have never made my own tofu or almond milk, but I love to eat both. I think it is cool you are considering getting your own machine to make some from scratch. I have the Simply Heavenly cookbook, and Abbot Burke is pretty sketchie on the water ratio in his recipe for almond milk. From what I can read he doesn't add any water after he soak-cooks the almonds and gets their skins off. It says he drains off the water then and just adds 1/8 teaspoon salt, 1 1/2 teaspoon vegetable oil, and two tablespoons of sucanat to the 1 cup of cooked skinned almonds. So I am thinking those almonds must absorb some good amount of the water used to cook them or it wouldn't make much milk after blending and straining through the cheesecloth. Certainly sounds expensive to me considering the price of almonds! Now the cashew milk recipe in the same cookbook makes a bit more sense to me. The ratio is one cup raw nuts to 4 cups water.
