Guest guest Posted June 15, 2006 Report Share Posted June 15, 2006 Sweet Potato Pineapple Casserole 6 boiled, mashed sweet potatoes 1/2 cup brown sugar 1 can crushed pineapple 1/4 cup margarine 1/2 cup flaked coconut 1 cup chopped pecans Boil potatoes with skins on. Peel & mash potatoes. Combine pineapple, margarine, & brown sugar. Cook over medium heat , stirring constantly until mixture boils for 1 minute. Reserve enough of the mixture to cover top of casserole. Combine the remainder of the mixture with the mashed sweet potatoes. Sprinkle coconut & pecans on top of casserole.
