Pesto Orzo with Peas

 

1 cup (7 oz.) uncooked orzo or rosamarina (rice shaped pasta)

1-1/2 cups Green Giant® Frozen Sweet Peas

1/4 cup purchased pesto

14 tsp. salt

Dash ground black pepper

 

In a large sauce pan, cook orzo as directed on package; adding peas during

the last

4 to 6 minutes of cooking time. Cook unit orzo and peas are tender.

 

Drain orzo and peas; place in a serving dish. Add pesto and toss gently to

coat.

 

Sprinkle with salt and pepper.

 

Yield: 5 (3/4 cup) servings.

 

Nutrition Information:

Per serving (3/4 cup) = calories 240, calories from fat 60, total fat 7 g,

saturated 1 g, cholesterol 0 mg, sodium 260 g, dietary fiber 3 g, protein 8

g.

 

Diabetic Exchanges: 2 starch, 1 vegetable, 1 fat.
