Guest guest Posted June 10, 2006 Report Share Posted June 10, 2006 Meatless Lasagna Rollups INGREDIENTS: • 1 1/3 cups tom. sauce, • 1 tsp oregano, • 1/2 tsp. basil, • 1 egg, • 1 pkg. frozen chopped spinach, thawed & squeezed dry, • 15 oz. ricotta cheese. [2 cups] • 1 1/2 cups [6oz.] shredded mozzarella cheese, [divided] • 1 cup [4 oz.] grated parmesan cheese, • 1/2 tsp. salt, • 1/4 tsp pepper, • 8 cooked lasagna noodles, kept warm. METHOD: In a medium bowl, beat egg lightly. Add spinach, ricotta cheese, 1 cup mozzarella cheese, parmesan cheese, salt & pepper. Combine ingredients. Spread about 1/2 cup cheese mixture on each noodle; roll up. Place seam side down, in 12x71/2 in. baking dish. Pour sauce over rolls; top with remaining mozzarella cheese.
