A white sauce would have 3 T melted margarine, then add 3 T of flour and cook over low heat until it bubbles. Add 1 C of soy milk (plain not vanilla). I often then add a little nutritional yeast and a shot of soya sauce or tamari to bring the sweetness down a bit. You could add whatever you want to this to make it the flavor of your choice. For cream of mushroom you could saute some mushrooms in a little margarine and a little soya sauce. I might also add some garlic and onion. Then throw that in the white sauce. It's driving me nuts. I would love to be able to eat thatold high calorie yummy stuff again. I cannot consume nuts in any quantity as I am prone to developing kidney stones and nuts are one of the foods that cause the calculii.
