[recipe] Orange Ginger Scones

This recipe is awesome. I found it in one of my omnivous

cookbooks and thought it sounded good, but knew it

would be even better with my addition of crystalized

ginger to the scones... that really made them special.

Enjoy!

 

Orange Ginger Scones

 

2 cups all-purpose flour

4 Tbs. sugar, divided

2 tsp. baking powder

2 tsp. ground ginger

1/2 tsp. salt

1/4 tsp baking soda

1/2 cup cold butter

1 egg

3/4 cup sour cream

1 tsp. grated orange peel

1/4 cup small diced crystalized ginger

 

In a bowl combine the flour, 2 tablespoons sugar, baking

powder, ginger, salt and baking soda. Cut in butter until

mixture resembles coarse crumbs. Combine the egg, sour

cream, orange peel and crystalized ginger bits; add to crumb

mixture and stir gently until soft dough forms.

Turn onto floured surface; knead 5 to 6 times. Divide dough

in half. Pat each portion into a 7 inch circle; cut each into six

wedges. Separate wedges and place 1 inch apart on ungreased

baking sheets. Sprinkle with remaining sugar. Bake at 400? for

10 to 12 minutes.

Yield: 1 dozen
