Time for our weekly raid the files. This weeks featured file folder is

called 'Cooking For One or Two'. Just what it sounds like, this folder

is for all our tried and true recipes that make one or two servings.

Perfect recipes for empty-nesters, college folks and singles.

Right now this folder is one of our skimpiest of all, so please

keep sharing your ideas and recipes for those nights when it is just

you and you are hungry something special.

I actually raided the files during the appetizers week but came up with

something else that I made last week and fit in great with this weeks Raid

The Files theme - RTF cooking for one or two...

 

I was sorting through the appetizers folder and pulled a few recipes out. I

had a hunk of creme cheese and needed to do something with it. I found a

recipe by PT and a recipe by Allison. I was going to sort of mix and match

the two creme cheese spreads and some of the others depending on what I had

on hand. I ended up just trying my own thing which was pleasantly inspired

by the several recipes in the folder.

 

I only used a half a brick of creme cheese just in case I didn't like it.

Well, it turned out wonderfully in my opinion.

 

4oz. creme cheese

3 to 4 sun-dried tomatoes chunks (in oil), minced

1/2 to 1 green onion, sliced (I use all of the onion, green on down to the

white)

1/2 serrano chile, chopped

1/2 garlic bulb, minced

 

Let the creme cheese sit out a bit in room temperature (unless you live in

the desert or the North Pole). Cut off (or spoon out) about 4 ounces

worth. Fold/stir in the remaining ingredients.

 

Those are pretty close measurements to what I used but really it is all to

taste depending on how much you like the ingredients and how flavorful you

want the spread. Obviously the more serrano and fresh garlic you use the

more heat and garlicky flavor you have. I think the onion gives it a bit of

freshness. Also add in a bit of oil from the sun dried tomatoes if you want

a bit more of that tomatoey flavor.
