I never see anyone eat the potato plane, they put sour cream on it,

or make fries, or a bunch of that liquid bright cheese sauce. I eat

alot of potatoes and I think they are good and healthy, I sure don't

have a big stomach, it's big on the inside because I'm always hungry

but flat on the outside. I think the chocolate would be bad.

I agree, it's probably not the potato itself, but rather the condiments

and method of preparation (i.e., french fries). However, it does look

like they took account of the latter by separating out a french fry

consumption category. Sweet potatoes are probably a better choice for

keeping sugar spikes to a minimum.

And let's not diss chocolate! :) Study after study is finding it to

be of benefit to cardiovascular health, including lowering blood pressure.

So, in the spirit of harmony, let's combine the two into a chocolate

potato fudge!

I haven't tried this recipe, but someone at work once brought in

a chocolate potato fudge and it was great. Maybe someone could

try this and we could file it as a tried and true.

Enjoy!
