Guest guest Posted June 5, 2006 Report Share Posted June 5, 2006 These are my friend Carolyn's cookies - simple to make and altogether too easy to eat :-( They are so more-ish that I have to halve the recipe and try to limit myself to only 2 per day. As the year progresses and the walnuts in the shops get older I tend to use pecans instead. I have used a bit less oil than the recipe states with reasonable success. Date and Banana Cookies 75g(3 oz) dates, chopped 75g (3 oz)walnuts chopped 3 medium bananas mashed 175g (6 oz) oats 100ml (3.5 fl oz) sunflower oil 1 tsp vanilla essence Mix ingredients together, oil baking tray, drop spoonfuls of the mixture onto the baking tray and bake for 20 mins at gas mark 6/400F/200C.
