Succotash Side Salad

 

We made this yesterday and the kids loved it, a good summer salad.

 

2 cups frozen baby lima beans, thawed

4 cups frozen corn, thawed

1 red bell pepper, diced

3 celery ribs, diced

1 red onion, minced

1 cucumber, diced

1 cup flat-leaf parsley, chopped

2 cloves garlic, minced

1/4 cup olive oil

1/4 cup red wine vinegar

1 tsp. salt or to taste

2 tsps. black pepper or to taste

 

Combine everything in a covered plastic storage container. Shake well to mix

dressing with veggies. Serve chilled or at room temperature. Can be made up to 2

days ahead. Serves 8.

I use October beans for my succotash, and they would be good in this!!
