Guest guest Posted June 4, 2006 Report Share Posted June 4, 2006 Cucumber Salad - Pickling Cucumbers, peeled and sliced Vidalia Onion(Sweet Onion) diced Mayo or Veganaise Pinch of Sugar Salt to Taste Lemon Pepper to taste Mix together. Sometimes I also add fresh diced tomatoes and bell peppers to this. Haystacks 1 Lg. Can of Bush Chili Beans 1 bag of Fritos corn chips Shredded Cheese Sour Cream Salsa Vidalia Onion, diced Lettuce, chopped Tomatoes, diced Bell Peppers diced Cucumbers diced Diced Black and Green Olives Heat the Chili Beans. Mix Lettuce, Tomatoes, Bell Pepper and Cucumber Together. Organize the ingredients in order on the table like this. Corn Chips, Chili Bean, Cheese, Sour Cream, Salad, Onions, Olives and Salsa Each person makes their own Haystack when they are ready to eat. It will get soggy if you make them up a head of time. Put a bed of Corn Chips on your Plate, then a layer of hot Chili Beans, cheese, sour cream, Salad, onions, Olives and Salsa. It is a quick easy Meal. Baked Beans 1 Lg. Can of Bush Baked Beans 5 Vegalinks or Big Franks, slice them up. 1 Vidalia Onion, diced 1 Tbsp. Smart Balance Spread 1 tsp. Mustard 1 Tbsp. Ketchup Saute the onions in the Smart Balance and mix with the remaining ingredients and heat thoroughly. Sub Sandwiches. I used the Worthington, Veggie Meat slices. They come in Bologno, Wham(like Ham), " Chicken, Turkey and Corn Beef " . Then sliced fresh veggies and Veganaise with lettuce. Keep wet ingredients in a separate container until you make them, so bread doesn't become soggy. Vega-Link Spread Mash Worthington Vega-Link(like hotdogs, canned) and mix with Veganaise( put into a food processor to make this go quicker). Add diced Onions, Celery and sliced Olives. Put on Onion Rolls and put in Ziplock Bags. " Chicken " Salad Spread 1 Can Worthington Fri-Chick, drained(save broth and freeze to put into a soup) Mayo or Veganaise 4 oz. Cream Cheese 1 Celery Stalk, chopped fine 1 Onion, finely diced 1 Tbsp Pickle Relish Squeeze the Fri-Chik Pieces and put into a Food Processor along with the Veganaise and Cream Cheese. Process until smooth. Dice the veggies on a Mandoline. Add the remaining ingredients and take in a Tupperware container in the cooler. Either spread on rolls or serve with crackers.
