Guest guest Posted June 3, 2006 Report Share Posted June 3, 2006 Butter Cookie Dough Cobbler--Peach dough 1/2 cup all purpose flour 1/4 teaspoon baking powder pinch salt 8 tablespoon unsalted butter; softened 1/2 cup sugar 1/2 large egg; or one yolk 1/4 teaspoon vanilla extract fruit filling 1 3/4 lbs peaches; peeled, pitted & sliced 2 teaspoon corn starch 1/3 -1/2 cup sugar 1 teaspoon vanilla extract; optional pinch cloves; optional Dough Mix flour, baking powder and salt in small bowl and set aside Beat butter and sugar until well blended. Beat in egg and vanilla. Add flour mixture; stir until just combined. Fruit Filling Toss to coat peaches, cornstarch, sugar, and any optional ingredient. Drop dough onto prepared fruit by heaping tablespoons. Bake @ 375 for 45-55 minutes. This recipe is for a 8' square or 9' round baking pan. May easily be doubled for a13x9 inch pan.
