Guest guest Posted June 3, 2006 Report Share Posted June 3, 2006 Spiced Apple Rings You can serve hot or cold as a garnish for your salads in place or with croutons. 6 medium apples, firm 1 sugar substitute to equal 1 1/2 cups sugar 2 sticks cinnamon 3 whole cloves 1 1/2 cups cranberry juice, unsweetened 1/4 cup lemon juice Wash and core apples, slice unpeeled into thick slices. Place in flat pan. Combine remaining ingredients, and boil 5 minutes. Reserve 1/4 cup juice mixture, and set aside. Pour remaining juice mixture over apple slices. Bake at 350 degrees for 45 minutes or until apples slices appear transparent; baste occasionally with the 1/4 cup juice mixture. Makes 12 servings.
