I have even made it just using leftover beans and TVP from taco night. Enjoy! Easy Taco Bake 2 cups coarsely crushed corn chips 1 can (16 oz.) vegetarian refried beans 2 cups shredded Monterey Jack cheese, divided 1 cup salsa 1 package Yves veggie ground (or other brand veggie crumbles) 2 tsp. taco seasoning 1 green onion, sliced 1 medium tomato, chopped Place corn chips in a greased 2 quart baking dish. Heat up refried beans until warmed through. Remove from heat and stir in 1 cup cheese and salsa. Spread evenly over chip layer. Toss veggie ground with taco seasoning; sprinkle over bean mixture. Top with remaining cheese and sprinkle with onion. Bake, uncovered, at 400?F for about 20 minutes or until cheese is melted. Sprinkle with tomato before serving.
