I baked some up and instead of the cinnamon I used a spice blend Donna sent me from Penzey's... but I do know they would be wonderful with simple cinnamon, so give them a try. Oatmeal Chip Cookies 1/2 cup vegetable shortening 1 cup sugar 1 tablespoon molasses 1 egg 1 tsp. vanilla 1 cup all-purpose flour 1 cup quick-cooking oats 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 1 cup semisweet chocolate chips In a large mixing bowl, cream shortening and sugar. Beat in molasses, egg and vanilla. Combine dry ingredients; add to creamed mixture. Stir in chips. Roll into 1 and 1/2 inch balls. Place on greased baking sheets about 2 inches apart. Bake at 350?F for 8 to 10 minutes. Cool 5 minutes before removing from baking pans.
