Guest guest Posted May 30, 2006 Report Share Posted May 30, 2006 Raisin Filled Cookies Cookies: Cream 1 cup sugar with 1/2 cup shortening (can use regular or butter flavor) Add 1/2 cup milk and 1 beaten egg; blend well Sift 3-1/2 cups flour with 3 tsp baking powder Add to creamed mixture Raisin Filling: Mix 3/4 cup sugar, 1 rounded Tablespoon flour Add 1 cup boiling water and 1 cup chopped raisins Cook until thickened Roll cookie dough in batches With cutter, cut equal number of rounds Place a dab of filling on 1/2 of the rounds, top with the other round and pinch to seal (You can use a cutter that has a removable insert; the bottom round and leave whole, the top round you can use the insert in the cutter to cut with a hole in the center) Bake at 350° until edges are just brown, about 8 to 10 minutes, these are a soft cookie You can also use jam or preserves as filling instead of the raisin filling.
