Guest guest Posted May 28, 2006 Report Share Posted May 28, 2006 this is a favorite. this time of the year, i use fresh corn. i also like to roast the jalapenos first and also add in some minced roasted roasted garlic. roasted poblanos instead of the jalapenos is excellent. corn salsa 2 cups corn (fresh or frozen [no need to defrost]) 2 T. cilantro, chopped 1/2 small onion, chopped 1-3 jalapenos, seeded and finely chopped juice from 1/2 a lime salt to taste roast the corn in a hot skillet, stirring constantly, until it is hot and starts to carmelize. pour corn into a bowl and let cool. stir in the remaining ingredients.
