Guest guest Posted May 24, 2006 Report Share Posted May 24, 2006 Speaking of ways to use up leftovers in our frigerators, this is a great summery salad recipe i tried recently when i needed to use up a cup of cooked lentils. Brown Rice Lentil Salad 1/2 cup uncooked brown rice 1 cup vegetable broth [ imagine brand no-chicken] 1 cup cooked lentils 1 medium tomato, seeded and chopped 1/3 cup thin sliced green onions 1 Tbs. minced fresh parsley 2 Tbs. red wine vinegar 1 Tbs. olive oil 3 garlic cloves, minced 2 tsp. lime juice 2 tsp. Dijon mustard 1/2 tsp. salt 1/4 tsp. pepper In a saucepan over medium heat, bring rice and broth to a boil. Reduce heat and cover, allowing to simmer for 40 minutes or until rice is tender. Cool. In a bowl combine rice, lentils, tomato, onion and parsley. In a small bowl, combine the rest of the ingredients. Pour dressing mixture over rice and lentils and toss to coat. Cover and chill for at least 1 hour before serving. Yield: 6 to 7 servings ~ PT ~ In the end we can never be given knowledge by others; we can only be stimulated.
