Here is a wonderful mix recipe that i use for making a white sauce. While it is not dairy-free, i am wondering if it could not be adjusted to be dairy free by using the readily available soy milk dry powder and then cutting in a vegan margarine ~ like Earth Balance brand ~ into the recipe to make the sauce very similar to the dairy version. i can't think of any reason why this would not work well given the chemistry of this recipe. Hope it is helpful. White Sauce Mix 2 cups instant nonfat dry milk ~ sub vegan soy milk powder 1 cup all-purpose flour 2 tsp salt 1 cup butter or margarine ~ use vegan margarine Combine dry milk, flour and salt. Mix well. W ith a pastry blender, cut in butter or margarine until mixture resembles fine crumbs. Put in a large airtight container. Label and date contents. Store in refrigerator. Use within 2 months. Makes 1 quart white sauce mix. Basic White Sauce 1/2 cup White Sauce Mix 1 cup cool water Pepper, herbs and spices, if desired In a small saucepan, combine white sauce mix and water. For a thinner sauce, decrease white sauce mix to 1/4 cup. For a thicker sauce, increase white sauce mix to 3/4 cup. Cook over low heat until smooth, stirring constantly. Season with pepper, herbs and spices, if desired. Makes about 1 1/2 cups sauce. ~ PT ~ You can tell the size of a man by the size of the thing that makes him mad. ~ Adlai E.
