These would be perfect for a lunchbox, picnic, hiking, or whatever tote-and-go thing you need. Banana Raisin Bars 3 cups quick-cooking oats [not instant] 1 cup shredded coconut 1 cup raisins 1/2 cup sunflower seeds 1/2 cup peanuts, chopped 1/2 cup margarine 3 Tbs. corn syrup 3 Tbs. honey 1 egg 1 tsp. vanilla extract 1/3 cup mashed banana Preheat oven to 325? and grease a 9 by 13 inch baking pan. In a large bowl, combine the first 5 ingredients. In a smaller bowl, combine the next 6 ingredients with an electric mixer until light and fluffy. Stir the wet ingredients into the dry until well combined. Spread in baking pan. Bake in oven for 50 minutes until firm and golden brown. Yield: 36 chewy bars Variation: Substitute 1/2 cup applesauce for the banana and add a pinch of ground cinnamon.
