Buttering up & A Bad Batch of Kale --linda and Shawn

OK you two! What's with the buttering up? I know linda is dishing out

the compliments because I've got the goods on her subversive activities,

and she's trying to stay on my good side! and I guess Shawn remembers

that I am an honorary member of the celery gang---a big C hand sign

salute to you, Shawn! linda! do we get to choose which hand we tie

behind your back? Shawn, I think it should be her writing hand, as her

pen is mightier than any sword! LOL!

 

Now--about the kale. I can remember some friends of ours who grew it in

Hawaii and it was so tender when it was young that they made great salads

with it--best I've ever had. (glorified lettuce?) But I wanted to try a

kale recipe the other day and so bought what I could find at the grocery

store. It was beautiful and green and had the curly and lacy fancy

leaves. It had rigid center stalks,also. The recipe I made had apricots

and raisins and onions in it and at the last you were supposed to throw

in the cut up kale and just wilt it. I had just chopped up the leaves,

and thrown the ribs away, but even though I cooked it longer than was

called for and even covered the pot and added a little juice to make it

more tender, it never did get tender. Chewy like swiss chard is good,

but this wasn't like that. The recipe would have been wonderful except

that we were picking little stringy tough pieces of kale out of our

teeth. So I'm just thinking this kale was a bad batch. I'd love to try

some of the dinosaur kale. I tried to grow some here once with seeds I

bought from Nichols Garden Nursery but it just didn't like where I put

it. Maybe I'll try again in the winter.

Now is that Shawn or Shaun? Or perhaps Sean? Is Shawn, Shaun, Sean a man or

womyn? I am dishing out the compliments when I tell the world that you are

the leader of the anarchists here? With the FBI monitoring what we are

putting in our recipes and all you should be famous shortly. My buttering is

totally dependent on whether or not there is a good side. You guys are going

to come back in the next life as a celery stalk. Then I shall like eating

both of you with PB & J. My mouth is bigger than either my pen, keyboard or

sword. Tie what ever you wish behind my back I still retain my powers. Now I

must go and get my tried and true recipe written up or someone will holler

that I don't contribute. Of course my recipe for cooking the lacinato kale

won't go into the files and yet it is my contribution to keep you all out

there from over cooking the kale and having your kids grow up telling

everyone that their mothers overcooked the veggies and that's why they hate

them.

 

The lacinato kale stalks take the same amount of time to cook as the kale

itself so I just chop it up all together, unless of course I suppose you

have a really long stem.But I think that I have a really good store as they

chop it up to within and inch or too of the leaves. I know that with chard

I chopped the stems up first and steam them a few minutes prior to putting

in the leaves. With collards I take the stems off period...they are nasty to

me. I just learned about these greens in January and have been eating them

steadily ever since. But the lacinato kale is definitely my favorite. I

don't like the other kale types. Sorry your recipe didn't work out for

you.From your description it definitely was not lacinato. Kale is basically

a cold weather green and best in January I hear. I will be planting it this

fall and you can bet it will be a ton. And I don't share. But even this time

of year I love it. I have a visual of you picking kale out of your teeth.

Unfortunately it also gets stuck in the brushes of your tooth brush. LOL Too

much information I suspect.
