Peanut Butter Coconuts (Recipe Review)

I was afraid these things would taste really darn good and sure enough I was

right. I really like the texture of the crispies and the peanuts in the

pb. The coconut is a great compliment of fresh flavor.

 

Depending on your tastes or sweet tooth you could option in anything. You

could get the choco-crispies instead of the regular and you could roll in

sprinkles instead of coconut. Kids or the kid in you might like that type

of option.

1 cup powdered sugar + 1/2 cup (1/2 cup for the coating)

1 cup chunky peanut butter

2 Tablespoons butter (room temperature)

1 1/2 cups Rice Crispies

flaked coconut

 

Mix sugar, peanut butter and butter together well (cream butter and pb - mix

in powdered sugar - fold in rice crispies). Roll into round balls

and chill for 1 hour.

 

Mix the 1/2 cup powdered sugar in a little water until quite thin. Dip

balls into this mixture, and then into flakes coconut.

 

I would use a regular commercial brand of PB since it seems a little

" stiffer " and will hold its shape better.
