I really like the texture of the crispies and the peanuts in the pb. The coconut is a great compliment of fresh flavor. Depending on your tastes or sweet tooth you could option in anything. You could get the choco-crispies instead of the regular and you could roll in sprinkles instead of coconut. Kids or the kid in you might like that type of option. Thank you very much Jeanne for the recipe! *http://tinyurl.com/h72mm* S. ---- 1 cup powdered sugar + 1/2 cup (1/2 cup for the coating) 1 cup chunky peanut butter 2 Tablespoons butter (room temperature) 1 1/2 cups Rice Crispies flaked coconut Mix sugar, peanut butter and butter together well (cream butter and pb - mix in powdered sugar - fold in rice crispies). Roll into round balls and chill for 1 hour. Mix the 1/2 cup powdered sugar in a little water until quite thin. Dip balls into this mixture, and then into flakes coconut. I would use a regular commercial brand of PB since it seems a little " stiffer " and will hold its shape better. These are awesome, by the way!
