I was wondering if one could make it and use capers for a spiced salty version because if I remember correctly one of the things I liked about feta was that it was salty. Remember if you plan on freezing some of that tofu scrambler don't add the potatoes since potatoes do not freeze well at all. I have always wondered how the companies manage to do it though. If you freeze portions of the scrambler you could add the potatoes later when you thawed it and cooked it though. I love the Gardenburger version of sausage patties. and their Chik'n Grill too. I have to try the cutlets yet, but PT says they are great. I trust her taste buds...yours are still suspect. LOL You are a wicked person in need of help not to tell me which spelling is correct. I actually had vegan options in mind for you that I brought to the e-table. That sounds excellent. I would pop in some potatoes for some good papas con juevos (y fakey-carne). I have not tried a tube of fake meat in some time though I remember I liked it very much (especially the Gimme Lean " sausage " variety). Tried some Boca breakfast patties recently and they are much better than the MSF version, imho (is " imho " annoying to anyone?). Better in flavor and texture (if one doesn't like the taste or texture of meat I don't think one would like this). What I really like is the salty richness of the feta/olives that go with the veggies/fruit. I figured that the tofu even if seasoned would not contain or resemble that flavor of the feta so why not add in some more olives or even capers as you suggested. Sorry, I do not have a spedific vegan option in place of feta for you - tofu crumbled and then possibly marinated in some oil or oil/vinegar based dressing and then added? LOL > Thanks for the tip on not freezing taters. I'll keep that in mind. I'd probably eat the whole thing anyway. Hey I don't blame you, I'd trust PT's tastes over mine as well. lol.
