The recipe for Spanish Rice & Beans listed an ingredient i am unfamiliar with: Sofrito. Is this a spice blend? Sofrito is a blend of green peppers, cilantro, and garlic, and is used in quite a lot of spanish dishes. How do you purchase this ingredient; does it come in a jar as a dried seasoning, or in a can as a moist thick sauce? Or do you just make your own each time from scratch?
