Guest guest Posted May 19, 2006 Report Share Posted May 19, 2006 i love this recipe because it makes for a nice weekend brunch treat and doesn't make too many pancakes when my kids are out at sleepovers. They are very filling so i can only eat one. Even though the recipes is intended for two, it can serve three lighter appetites. Banana Oat Pancakes ~ for two 1 1/3 cups all-purpose flour 3/4 cup old-fashioned oats 1 Tbs. sugar 2 tsp. baking powder 1/2 tsp. ground cinnamon 1 egg 1 1/3 cups milk 1 cup mashed ripe banana 2 Tbs. vegetable oil Maple syrup In a large bowl, combine flour, oats, sugar, baking powder and cinnamon. Combine egg, milk, banana and oil; stir into dry ingredients until just moistened. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Serve with syrup.
