Guest guest Posted May 19, 2006 Report Share Posted May 19, 2006 Now that the weather is getting hot, i find myself going for recipes that can be quickly sauted on the stove top instead of needing to be baked in the oven. These have a nice flavor and were very easy. i added a few tablespoons of water to the pan as i was cooking when it looked like it was drying out too much. You may not need to do that yourself; probably depends on what fat you use. Cumin Sweet Taters 4 Tbs. butter or margarine 2 large onions, cut into chunks 2 pounds sweet potatoes [slender if possible], peeled and cut into 1/4-inch slices 3 large green bell pepper, cut into chunks 2 1/2 Tbs. cumin seed [not powder!] Sea salt or tamari, to taste In a large skillet or wok over medium heat, saute onions and sweet potatoes in the butter for 15 minutes. Add in the bell peppers and cumin seed and cook until veggies are tender and cumin seed has browned. Stir in salt or tamari to taste before serving.
