It is delicious steamed or sauteed with a little olive oil. You can add onion and/or garlic if you like those. My son brought home a girl friend who worked in a restaurant and couldn' t believe we actually ate it. She thought it was a garnish. LOL! It is best in the early spring or in fall, especially after frost hits it. I think, if the statement on the site which said that meat prices are going down due to lower sales is true, it will, unfortunately, mean people will go back to eating meat - especially since vegetable and fruit prices are going up.
