Guest guest Posted May 13, 2006 Report Share Posted May 13, 2006 CITRUS GLAZED RAISIN BARS (Yield: 2 dozen) 2 cups self-rising flour 1/2 cup sugar 2/3 cup butter or margarine 4 cups eggs, lightly beaten 1/4 cup self-rising flour 2 cups sugar 2 tablespoons grated orange rind 1/4 cup orange juice 1 1/2 cups raisins, chopped 1 cup flaked coconut Citrus Glaze (below) Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray. In a medium bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Press onto bottom of prepared baking pan. Bake for 15 minutes. Cool. In a large mixing bowl, combine eggs, flour, and sugar, stirring until smooth. Stir in orange rind, juice, raisins, and coconut. Pour over layer. Bake 20 to 25 minutes until lightly browned. Cool in pan on a wire rack. Spread Citrus Glaze over top. Cut into bars. CITRUS GLAZE 1 tablespoon orange juice 1 tablespoon lemon juice 1 tablespoon butter or margarine 1 1/2 cups confectioners' sugar In a small bowl, combine all ingredients, beating to make a smooth, thin frosting.
