i prefer the idea of using natural less processed " better for

you " PB in cooking, and i do use it for sauces and on

everything else. However, i do know that in most cookbooks,

especially in regards to baked goods, they always seem to

recommend the use of the " unhealthy " store brands.

i think it has something to do with the uniformity of the

PB products and the kitchen recipe testers can't guarantee

the recipe will come out the same each time should one

use natural PB. But that said, for myself, i do prefer eating

and cooking with natural PB as much as possible; i just can't

stand the flavor or texture of the stuff i was raised eating

[namely JIF] anymore. i only keep a small jar in my pantry

for some baking. Comparing the labels, taste, health... just so

many reasons to avoid using anything but natural PB.

 

My best advice for how to stir or store all natural nut butters:

i keep my jars of PB and tahini tightly closed, but stored upside-

down. Then right before i am going to use it i flip it over, wait

a few minutes for the stuff to readjust, and then use a wooden

spoon handle to stir; just works better for me. i used to always

have the problem of the bottom of the jar being so thick and

gloopy while the top of the nut butter was too runny and oily

before; storing it upside-down helped solve this and made

it easier for me to incorporate the " bottom " since once i

flipped it back upright it was now on top. :)
