Guest guest Posted May 9, 2006 Report Share Posted May 9, 2006 i was digging through my little index card file box of family favorites looking for a special dessert to make for tonight and this recipe caught my attention. It was shared with me about 10 years ago by a nice lady i met at a MOPS [moms of preschoolers] meeting; she had brought it for the snack table and i pestered her for the recipe until she finally remembered to write it down. i didn't realise until today that this moist delicious cake can actually be easily made into a rich vegan dessert. Try it soon for yourself, you won't believe how wonderful it is until you do. Date Chocolate Chip Cake 1 1/4 cup boiling water 1 cup chopped dates 3/4 cup margarine [use vegan brand] 1 cup sugar 2 cups all-purpose flour 1 tsp. baking soda 1 heaping Tbs. cocoa powder Topping: 1 cup chocolate chips [use a vegan brand like Sunspire] 1 cup brown sugar 1 cup chopped nuts ~ In a mixing bowl, combine the boiling water, chopped dates, margarine and sugar; stir together and allow to cool to room temperature. ~ In a small bowl, stir together the flour, baking soda and cocoa, then add this to the cooled date mixture and stir until just combined. Pour cake batter into a greased 9x13 inch cake pan. ~ In the same small bowl you used to combine the dry ingredients, stir together the three topping ingredients: chocolate chips, brown sugar and nuts. ~ Sprinkle the topping evenly over the top of the cake batter and gently press down the topping slightly with your hand. ~ Bake cake in a preheated 350û oven for about 30 minutes.
